Are white tablecloths and waiters on their way out in hotel restaurants in favor of an area that more resembles a gourmet market? Hilton Worldwide thinks so.

In a big departure for its pricier, full-service hotels, it's begun pitching three new restaurant concepts – which are more akin to eating at Panera Bread or grabbing a meal from a Whole Foods store than a traditional sit-down hotel restaurant – to owners of Hilton Hotels & Resorts, Embassy Suites and Doubletree by Hilton.

Hilton is betting that guests in some of its pricier hotels will eat inside the hotel if they can skip the fuss, time and money involved with table service, says Beth Scott, Hilton Worldwide's vice president of food and beverage concepts.
