FL Hotels Stretch Food Dollar | floridatoday.com

As occupancy rates sag, the food and beverage departments at Brevard County hotels are increasingly important to their operations' bottom lines. But as food costs continue to skyrocket, it is taking some clever planning to get the most revenue from each potential diner, hoteliers say. "Our food suppliers raise their prices every day, but we can't raise our prices," said Tom Poehailos, general manager of the Crowne Plaza Oceanfront Resort, north of Indialantic. "We look for what's on special and try to be as creative as possible with our food. We really depend on the culinary talent in the kitchen".
