New Edition of EI Textbook Introduces Readers to Lodging Industry

Lansing, Mich., The American Hotel & Lodging Educational Institute has published a new edition of the introductory textbook, The Lodging and Food Service Industry, by Gerald W. Lattin, Ph.D., CHA, former dean of the Conrad N. Hilton College of Hotel and Restaurant Management, University of Houston.

The seventh edition of this textbook takes a global look at the complex lodging and food service industry, provides a historical perspective of the industry, and offers a department-by-department overview of the organization and structure of lodging and food service operations. Readers are also introduced to many careers available in the hospitality industry.

New material includes coverage of industry globalization with an emphasis on China, India, and the Middle East; “green” hospitality; ecotourism and adventure travel; and acquisition, merger, and conversion activity within the hospitality industry. The book also introduces six new members of the Hotel Hall of Fame: Sam Barshop, Stephen Bollenbach, Curtis L. Carlson, Cecil B. Day, Barron Hilton, and Barry Sternlicht.
