Jerry AdamJerry Adam, former chef at the Michelin-starred Ynyshir Hall and Llangoed Hall, is now head chef at the 18-bedroom the Swan@Hay hotel in Hay-on-Wye, Wales. The 26-year-old joined the hotel at the beginning of March and is now assembling a new team, including a sous chef, chef de partie, and commis. He will now also focus on creating new dishes using locally-sourced products, and has plans to work on a kitchen garden to source his own ingredients. Adam previously worked at Llangoed Hall – which is part of the same group ‒ under head chef Nick Brodie for three years, and also worked at the Olive Branch in Clipsham, the Michelin-starred Bath Priory, and the Queensberry, both in Bath.
