Jérôme ChautardChef Jérôme was born and brought up in Bourg en Bresse, near the city of Lyon, whose residents adhere to the belief in not wasting any part of the ingredients they use in their cooking. It’s a philosophy that he has also remained true to, using only top quality ingredients as well as traditional methods of cooking, so that diners not only experience true French cuisine, but the casualness and warmth of eating at a relative’s house. At the age of 16, Chef Jérôme followed his passion for culinary art, cooking first at a restaurant in his hometown, before moving to St. Tropez on the French Riviera, where he spent 15 years working, learning and acquiring a sound understanding of Mediterranean and traditional French dishes. In his 22 years in the culinary industry, he worked at many famous restaurants in France, before moving to Thailand to head the French restaurant, Aubergine. His expertise in Mediterranean and traditional French cuisine made the restaurant extremely popular in the city. He then moved on to the Conrad Hotel Bangkok as Chef de Cuisine.
