Vincent Pellegrini Graduating from the Culinary School at SENAC in São Paulo, the Brazilian native began his career as an in-house chef at a large international company before switching his focus to hotels. Since then Chef Pellegrini has spent more than eight years in Latin American and six in the Caribbean opening the restaurants at properties like the Grand Hyatt São Paulo, Hyatt Regency Trinidad, and most recently, the Hyatt Regency Curacao. Chef Pellegrini’s career highlights include planning and executing the menu at the Fifth Summit of the Americas held in Trinidad and Tobago in 2009, which was attended by 34 presidents and prime ministers. He was also responsible for the dinner at the Commonwealth Heads of Government Meeting (CHOGM) for the Queen of England and the other presidents, kings, prime ministers, and heads-of-state attending the event.
