Simon de Swaan De Swaan comes to the Resort with more than 19 years of restaurant and hospitality management experience. He will lead the Resort's food and beverage team, overseeing management and day-to-day operations of the portfolio of dining venues at Four Seasons Resort and Residences Vail, including the new restaurant and lounge The Remedy as well as the Resort’s signature restaurant Flame. He joins Four Seasons Resort and Residences Vail following a stint as the principal owner of a restaurant and hospitably consulting business in New York City. Prior to that, De Swaan held various culinary roles within the Four Seasons family such as Director of Food and Beverage at Four Seasons Hotel New York and Assistant Food and Beverage Director at Four Seasons Hotel Boston. He also held management positions running high-volume, renowned restaurants throughout the Northeast such as the AAA 5 Diamond, Mobil 4 Star awarded restaurant Aujourd'hui in Boston. De Swaan comes from a deep background of culinary expertise. His education includes a degree from the Culinary Institute of America, and he attended both Harvard University and the University of Massachusetts. While attending school, he remained committed to the hospitality industry, working as the restaurant manager at the acclaimed Henrietta's Table, and gaining real-world experience that he utilised throughout his career. At Four Seasons Resort and Residences Vail, De Swaan will oversee the Resort’s dining outlets, ensuring their continued preeminent status in Vail and throughout the United States as top culinary destinations. De Swaan’s passion for the food and beverage industry and his expertise as a leader will permeate all aspects of the hotel’s restaurants and food and beverage programs, from exceeding expectations with outstanding service to innovative culinary offerings and seasonal experiences. Having spent much of his career at top hotels and restaurants, Simon brings a wealth of knowledge and experience that will lend itself well to evolving and continually enhancing the Resort’s award-winning dining offerings.
