Nicolas BailetNicolas joins The Ritz-Carlton, Millenia Singapore from the Bulgari Hotel London, where he has been the Director of Food & Beverage since 2013. In his new capacity as Executive Assistant Manager for Food and Beverage, Nicolas will oversee the Food and Beverage operations for Colony, Summer Pavilion, Chihuly Lounge, In-room Dining, Banqueting, Restaurant Reservations, and will lead the hotel’s Food and Beverage promotional strategies. Nicolas’ illustrious career has led him to hold various operational and management positions in several Michelin-starred dining establishments under the Alain Ducasse Group, in six different countries. These include Benoit Tokyo and Beige Alain Ducasse Tokyo. Originally from France, Nicolas is fluent in French and English.
