Appointed Director of Food and Beverage

Aparium Hotel Group’s Charmant Hotel announces the
appointment of Michel Gabbud as the hotel’s Director of Food and Beverage. With over 18
years of industry experience, Gabbud will leverage his extensive knowledge of the hospitality
business to oversee the day-to-day operations and success of the hotel’s food and beverage
outlets, which include The Restaurant, The Parlour, the Lobby Lounge Bar and the Rooftop
Terrace, as well as in-room dining and banquets and catering operations.
Most recently, Gabbud served as the Restaurant Director at the two-star Michelin rated, critically
acclaimed Sixteen Restaurant in Chicago.
Gabbud began his career in Switzerland before joining the Sandals Hotel Group in The
Bahamas. He was later transferred to Jamaica where he assisted with the opening of the
Beaches Boscobel Resort. Following his time in Jamaica, Gabbud relocated to Chicago, where
he worked at several notable hotels, including The Peninsula Chicago, the Four Seasons Hotel
Chicago and Sofitel Chicago Water Tower. In 2011 he accepted a position at the Park Hyatt
Beijing, where he spent two years before returning to Chicago to take on the role as General
Manager of Centerplate to lead the pre-opening of “Sophie’s at Saks,” an upscale restaurant at
Saks Fifth Avenue.
