The appointment of Borbolla as executive chef for the resort's three onsite rest aurants and unique culinary experiences (i.e., chef in suite, beachside Bar-B-Q) is a step towards the resort's further enhancement of going beyond providing great dishes for guests to choose from and truly creating a full culinary trip that incorporates special features of the area into cuisine.

Borbolla's nearly 20 years experience in hotel specific fine dining and cuisine, brings a fresh and razor-sharp perspective on what it takes to develop and provide incredible dishes that transcend expectations. His astute sense of transforming simple ingredients into delectable meals brings a wealth of new possibilities for enjoyment for guests of the resort. Having lived and worked in Puerto Morelos and throughout the Riviera Maya for most of his life and career, Chef Borbolla has a true understanding of local ingredients and how to incorporate them into dishes that tell a story of the surrounding environment.

18 January 2019 — Battery Wharf Hotel, Boston Waterfront, part of Leading of Hotels of the World situated in Boston's historic North End, has appointed Keith Halliday as Executive Chef and Director of Food & Beverage. Originally from Scotland, Chef Halliday brings over 30 years of experience in the hospitality industry with an extensive background in Food & Beverage.
