Miguel Leopoldo Gallegos has been named Executive Chef of Casa Velas, an adults only boutique hotel and ocean club in Puerto Vallarta, Mexico. In his new role, he is responsible for the Emiliano and the Beach Club Restaurant and the resort's 24-hr insuite dining program. He will also bring his specialized expertise to developing tailored, unique culinary experiences for guests. A member of SLH (Small Luxury Hotels of the World), Casa Velas is the only boutique hotel on the Mexican Pacific coast to hold Four Stars from Forbes Travel Guide.
With over 10 years of culinary experience, Gallegos has spent time in renowned restaurants and hotels throughout the world, including Lima's Central (The Best Restaurant in South America 2019 - San Pellegrino 50 Best), Mexico City's Biko (San Pellegrino 50 Best), Germany's Aqua Restaurant (3 Michelin ***), South Africa's Tasting Room in Le Quartier Francoise (San Pellegrino 50 Best), Japan's Narisawa (2 Michelin **). Most recently, Gallegos served as Executive Senior Sous Chef at AM Resorts' Puerto Vallarta properties. Prior to, he was Executive Chef of El Dorado Maroma by Karisma.

21 June 2018 — Denys Montes de Oca has been promoted to Corporate Leisure Sales & Marketing Director for Mexico's Velas Resorts. In her new role, she'll be heading up the resort collection's sales team in the US and Canada as well as spearheading efforts in emerging markets like South America, Europe (UK, Germany and Russia) and Australia.
29 November 2017 — Guillaume Morance has been named Executive Chef of the AAA Five Diamond Grand Velas Riviera Nayarit. In his new position, he is responsible for the “Beyond All-Inclusive, Beyond All Compare” resort’s five restaurants, three of which are AAA Four Diamond rated; poolside snack bar; casual all day dining option, and the catering operation of the 267 all suite luxury resort.
