Rosso, the Italian restaurant at Amwaj Rotana, Jumeirah Beach Residence, Dubai, has appointed Salvatore Barcellona as its new speciality chef.
The Sicilian has worked in the Middle East since 2011, previously heading up the Italian restaurant in Radisson Blu Yas Island, Abu Dhabi before moving to Media Rotana in Dubai where he held the position of speciality chef at Prego's.
Barcellona says his ethos for working in the kitchen is based around transforming simple dishes into innovative culinary pieces.
Recent Appointments at Rotana
14 September 2020 — Ali has been associated with Rotana for over seven years. With more than 20 years of experience in the hospitality industry, he progressively occupied more responsible positions at major hotels in Egypt, including resort destination of Hurghada and Sharm el Sheikh, before moving to the UAE in 2012 and taking on the role of deputy general manager of Pegas Touristic, a leading tourism group of companies specialising in CIS markets.
11 February 2020 — He will oversee the 242-key Arjaan Dubai Media City, along with the 243-key Centro Barsha.
Ilgaz brings more than 35 years of experience to the role. Previously GM at The Cove Rotana Resort, Al Ghurair Rayhaan and Arjaan by Rotana, Ilgaz has also overseen the pre-opening of Amwaj Rotana in JBR and the renovation of Jumeirah Rotana in Dubai.
