Nick Fielding

Timbers Resorts, the leading developer and operator of luxury boutique properties around the globe, announces today the appointment of one of its top professionals, Nick Fielding, as the company's new Corporate Director of Food & Beverage. In this role, Nick will oversee food & beverage operations across the Timbers' brand portfolio with a focus on redefining the program at Hokuala on the island of Kauai and its esteemed dining establishment, Hualani's.

Under Nick's leadership, Hualani's will debut a redesigned food & beverage program that aligns with the four seasons with new menus debuting on each solstice and equinox dates in March, June, September and December. Fresh seafood will remain a pivotal pillar to the menu with the goal of sourcing every ingredient either from the property's Farm at Hokuala, the island of Kauai or greater Hawaiian Islands for a truly authentic culinary experience. In addition to showcasing hyperlocal ingredients, his vision for Hokuala is to strengthen the property's dedication to being stewards of the land and honoring traditional Hawaiian customs from farm to fork.

Nick Fielding brings over 23 years of experience in luxury hospitality to his new role, including three years at Timbers Resorts, where he was previously the Director of Operations overseeing the brand's global portfolio of boutique resorts and resort communities. Before his time at Timbers, he served as the Corporate Director of Operations for China Grill Management where he was responsible for overseeing all operational aspects of the rebranding and relaunch of the iconic Asia de Cuba Restaurant Group as well as the development of future brand opportunities and global expansion in London, Abu Dhabi, Dubai, New York and Bahrain. During his tenure with China Grill Management, Nick was also responsible for all food and beverage operations of Nautilus - A Sixty Hotel, through pre- and post-opening with Executive Chef Guarnaschelli.
