As executive chef, culinary visionary Marque Collins spearheads the food and beverage program for Surety Hotel, debuting this month in Des Moines burgeoning downtown district. Worldly takes on traditional tavern fare at the property's signature restaurant, Mulberry Street Tavern. With an open-hearth kitchen, the menu comprises meat-forward dishes showcasing the flavor of the wood grill. A self-taught chef with more than ten years of experience, Collins worked across Chicago's Boka Restaurant Group's portfolio of restaurants alongside Jean Banchet Award-winning chef Chris Pandel, most recently serving as chef de cuisine at the former Wrigleyville Dutch & Doc's and executive sous chef of premier steakhouse Swift & Sons.
