Adrian Gerboles

With more than 20 years of international culinary experience, Executive Chef Gerbolés brings passion and creativity to Canopy by Hilton Cancun La Isla, as he steps into his new role at Azulinda Café & Bar and Wander Rooftop. Believing in the importance of using local and sustainable products, Gerbolés creates a new, authentic culinary experience at the hotel.

Through his locally inspired menus, Gerbolés introduces guests to native specialties and provides opportunities to support local vendors. Whether enjoying his Mayan Paella, blending classic Paella traditions with a local Caribbean twist, or the bright flavors of his Seafood Taco Trio, guests will savor authentic cuisine and fresh flavors for a true Cancun experience.

Prior to joining Canopy by Hilton Cancun La Isla, Gerbolés was most recently Executive Chef at Hilton Mexico City and served on the pre-opening task force at Umbral, Curio Collection by Hilton. He is a graduate from multiple culinary institutions, having formally trained under programs including the Gato Dumas Institute and Le Cordon Blue - Sofitel.
