Marco Acquaroli

Top chef Marco Acquaroli has joined Atlantis The Palm Dubai in a senior culinary role. The Italian is now the resort's executive sous chef, having a hand in Hakkasan, Nobu, Ossiano, Seafire and Bread Street Kitchen from Gordon Ramsay.

In his new post, he will oversee culinary operations, concept development, logistics and menu creations for all the mentioned restaurants. Ossiano in particular is widely considered one of the finest restaurants in the emirate. Helmed by Gregoire Berger, the restaurant received three toques in the inaugural Gault&Millau UAE Guide this year, with Berger himself named Chef of the Year.

Acquaroli has over 10 years of experience across Europe, Africa and the Middle East. He most recently served as executive sous chef at Rockfish in Jumeirah Al Naseem. He also previously spent six years with Four Seasons, first as a chef de partie, then as Italian chef in Sharm El Sheikh and later sous chef in Geneva.
