Gilbert Bolivar

Innisbrook, A Salamander Resort, in Tampa Bay announces the appointment of Gilbert Bolivar as Director of Food and Beverage. In this role, he will oversee the operations of the expansive resort's food and beverage outlets including Packard's Steakhouse, Market Salamander Grille, Turnberry Pub, The Grill at Loch Ness, and Fairways Coffee Bar. In addition, he will oversee the resort's extensive banquet operations.

A seasoned hospitality professional, Bolivar has more than two decades of leadership experience in the development of opening and operating hotels, restaurants, nightclubs, casinos and more. A Miami native, he started his career at Mangos Tropical Café in South Beach - eventually working for Kimpton Hotels & Resorts, Marriott International, Hilton, Caesars Entertainment, and the Waldorf Astoria in New York City. He has also overseen the food and beverage operations for Universal Studios Florida - one of the largest theme parks in the U.S.

Prior to joining Innisbrook, Mr. Bolivar served as Vice President of Food and Beverage Operations in the senior living sector overseeing 19 luxury properties located in Virginia and Florida. He earned a master's in hospitality management from Cornell University and sits on the board of the Florida Senior Living Association as the hospitality chair.
