In his new role, Chef Dimoudis will report directly to Executive Chef Brent Devlin and will spearhead the highly anticipated culinary evolution of the resort's signature restaurant, Atlantikos.
Coinciding with his appointment, Atlantikos will undergo a comprehensive rebranding, transitioning from its current Mediterranean format to a deeply authentic, elevated Greek dining experience. As a native of Greece, Chef Dimoudis brings an innate understanding of the country's rich culinary heritage, positioning him perfectly to introduce a new menu defined by traditional techniques, pristine ingredients, and modern sophistication.
With over a decade of experience in professional kitchens, Chef Dimoudis's culinary philosophy is rooted in simplicity, precision, and an unyielding commitment to quality. He joins The St. Regis Bal Harbour following a successful tenure as Head Chef at The Ritz-Carlton Doha, where he led multiple high-volume luxury outlets. Under his leadership, the team secured the prestigious Taste of Qatar 2025 award for STK with an impressive 3-star rating.
Prior to his time in Doha, Chef Dimoudis sharpened his craft at the acclaimed GAIA Monaco, thriving in a fast-paced, high-pressure environment that helped him cultivate a deep appreciation for culinary excellence and clean, honest flavors. Throughout his career, he has remained dedicated to continuous learning and maintaining a unique, individual culinary voice.
