Lattin, Ph.D., CHA, former dean of the Conrad N. Hilton College of Hotel and Restaurant Management, University of Houston.

The seventh edition of this textbook takes a global look at the complex lodging and food service industry, provides a historical perspective of the industry, and offers a department-by-department overview of the organization and structure of lodging and food service operations.
