Dwayne CheerWith well over a decade of culinary expertise under his belt, Dwayne perks up the dining scene at Soori with his bold flavours and contemporary takes on authentic local cuisine. His professional career spans from Australia to London and Dubai, with exciting tenures, most recently conceptualising and opening the successful At.mosphere Burj Khalifa the world’s highest restaurant and the opening of the flagship hotel of The Address Hotels Portfolio in Dubai. He has worked in luxurious restaurants around the world including– New Zealand’s ICON, Sydney’s Orso Bayside, Notting Hill’s 192 Restaurant and Michelin-starred The Greenhouse restaurant in Mayfair London. Dwayne joins Alila Villas Soori, imparting his skills and years of global experience with the resort’s culinary brigade; chiefly overseeing two distinctive beachfront dining venues, namely Cotta and Ombak. Among his aspirations is creating destination dining with cuisine that embodies the indigenous atmosphere of West Bali that guests come to Alila for.
