Paolo BianchiLes Grandes Alpes Private Hotel in Courchevel 1850 announces the appointment of Executive Chef Paolo Bianchi. Joining the team ahead of the upcoming ski season, Bianchi will lead the culinary team at Les Grandes Alpes, reimagining the menu at Le Bizan restaurant – the hotel’s Japanese restaurant, and drawing upon his Italian routes to evolve the extensive in-room dining offering. Bianchi joins Les Grandes Alpes after two years as Sous Chef at the acclaimed Japanese restaurant, Zuma in Rome. His experience and culinary achievements are expected to bring a new dimension to the hotel’s food and beverage offerings, with a promise of combining modern Japanese cuisine with Mediterranean fusion, using local influences as a basis. The 32-year-old Chef’s career has taken him across the globe, starting in Paris cooking alongside the critically acclaimed Alain Ducasse at Le Jules Berne located at the foot of the Eiffel Tower. He then travelled to Dubai to further his passion for Asian fusion cuisine at Jean-George Kitchen at Four Seasons Resort Dubai at Jumeirah Beach.
