Adrian Marcelo has been appointed Executive Chef at The Westin Princeville Ocean Resort Villas in Kaua‘i

The Westin Princeville Ocean Resort Villas has announced the appointment of Adrian Marcelo as the new executive chef at the 18.5-acre resort located on Kaua'i's north shore. Reporting to the director of food & beverage, Marcelo will be responsible for all culinary operations at The Westin Princeville Ocean Resort Villas with a focus on implementing new concepts and ideas at the resort's two dining outlets, Nanea Restaurant and Bar and Wailele Bar.
Marcelo brings more than 16 years of experience to the resort's culinary team and previously served as sous chef at The Westin Princeville. He first began his training at Scottsdale Culinary Institute and earned his associate's degree of occupational studies in hospitality & restaurant management at Le Cordon Bleu. Marcelo continued to hone his skills under renowned chef Jean-Marie Josselin, a pioneer of the Hawaii Regional Cuisine movement. He held positions at Ambrosia Fine Dining in Orange County, Nobu Las Vegas, Pacific Café, Josselin's Tapas Bar & Grill and most recently The Club at Kukui'ula on Kaua'i. Prior to returning to The Westin Princeville Ocean Resort Villas, Marcelo spent half a year traveling through Southeast Asia to further connect with his roots and gain inspiration in the kitchen, allowing him to fine-tune his innovative Euro-Asian fusion style.
While Marcelo is well versed in traditional techniques through his culinary training, his passion for creativity and modern styles of cooking has allowed him to cultivate a unique style of fusion artistry. In addition to his desire to constantly innovate and bring exciting new dishes to the table, Marcelo is passionate about leading by example and helping up-and-coming cooks find and develop their own style, setting them up for success in their own culinary careers.
