Hilton Dubai Palm Jumeirah is pleased to announce the appointment of Edward Mair as Executive Chef, bringing more than 25 years of international culinary and luxury hospitality experience to the award-winning beachfront resort.
A seasoned culinary leader with an extensive career spanning the Middle East, Europe and Asia, Mair brings a wealth of experience in leading complex culinary operations, developing innovative dining concepts and building high-performing multicultural teams.
In his new role, Mair will oversee the culinary direction across Hilton Dubai Palm Jumeirah’s diverse Food & Drink portfolio, encompassing some of the resort’s most distinctive dining destinations, including Trader Vic’s, Barfly by Buddha-Bar, CLAW BBQ and Jones The Grocer, alongside the hotel’s wider restaurant, bar, pool and beach dining experiences. Working closely with the resort’s Food & Drink and leadership teams, he will focus on culinary innovation, quality and consistency, while nurturing talent and continuing to strengthen the property’s position within Dubai’s dynamic dining landscape.
Mair joins Hilton Dubai Palm Jumeirah following senior culinary leadership roles across Dubai, Saudi Arabia, China and Europe. His connection with Dubai stretches back more than 15 years, originally from Scotland, Mair began his culinary where he progressed from Commis Chef to Sous Chef over nine years. The experience established the foundations of a leadership philosophy centred on culinary excellence, operational discipline and developing talent from within.
Mair’s appointment reinforces Hilton Dubai Palm Jumeirah’s continued commitment to evolving its culinary offering and delivering distinctive dining experiences for hotel guests, Dubai residents and international visitors alike.
