Vollmer joins InterContinental San Diego following his tenure as Assistant Director of Food & Beverage at The Kimpton Gray Hotel in Chicago, where he led operations across three outlets, managed 15,000 square feet of banquet space, and spearheaded the successful renovation and re-launch of rooftop venue Boleo. Throughout his career, he has driven operational excellence, maintaining beverage costs while directing F&B operations for marquee events including the Chicago NASCAR Street Race Weekend, Lollapalooza, the Chicago Marathon, and the 2024 Democratic National Convention. His background also includes serving as General Manager at Niu Japanese Fusion Lounge, where he established strategic cross-property partnerships, including serving as the sole sushi vendor for InterContinental Chicago catering events.
