As sustainability moves from a “nice-to-have” to a core expectation, some of the most innovative hotels and resorts are proving that green design can be deeply cultural, artistic, and locally rooted.

Here are a few inspiring examples:

  • Mercer Barcelona (Spain), a masterclass in heritage sustainability.

Housed in a series of restored medieval structures, including Roman-era walls and 18th-century architecture, the hotel reduces environmental impact by conserving embodied carbon rather than building anew. They‘ve added Mediterranean vertical gardens, reused/redistributed furniture instead of discarding it, replaced single-use plastics with refillables, and curated Catalan art throughout the property.

  • 1 Hotel Brooklyn Bridge (USA), a living example of eco-design rooted in local identity.

Built with reclaimed materials from New York’s industrial past, including beams from the old Domino Sugar Factory, the hotel blends nature (green space with garden beds) with craftsmanship. Their operations include rainwater collection tank, organic mattresses, and green energy system.

  • La Sultana Oualidia (Morocco), where regenerative hospitality meets cultural immersion.

The hotel operates with fully sustainable water systems in a sensitive lagoon environment and grows much of its own produce on-site, serving farm-to-table cuisine. It also links environmental and social duty: for every ton of CO2 it donates to local eco projects or charities, and its governance prioritizes equality, including women in senior roles.

What these places teach us:

  • Heritage = low-carbon design when buildings or materials are preserved and reactivated.
  • Local craftsmanship reduces footprint while strengthening cultural connection.
  • Circular systems (like upcycling) turn waste into value, engaging guests and communities.
  • Sustainability becomes experiential when tied to history, nature, food culture, and art.
