Frederick J. DeMicco, Ph.D., RDN was the Executive Director (2019-2025) and full Professor in the School of Hotel and Restaurant Management at Northern Arizona University.

He is now an NAU Affiliate member. Formerly he was Professor and the Aramark Endowed Department Chair in the Lerner College of Business & Economics in Hospitality Business Management at the University of Delaware.

Dr. DeMicco was Associate Director in the School of Hotel, Restaurant and Recreation Management (HRRM) at Penn State University, where he was Professor-in-Charge of the Hotel & Restaurant Management undergraduate program and also was the Professor- in Charge of the Master of Science and PhD graduate program for five years.

He presently is a Conti Distinguished Professor at the Pennsylvania State University. Dr. DeMicco is the Honorary President of International Academics and the Dean of Business Executive Leadership and Professional Programs at the Learning Campus in Tuscany (SIAF) Campus in Volterra, Tuscany – the home of Innovation.

He has also led students to 4 Olympic games, including Sydney and Beijing working in the Olympic Village with Aramark. Dr. DeMicco was also a Darden Eminent Scholar Chair Visiting Professor to the University of Central Florida - Rosen College; the USF Sarasota- Manatee and Colorado State University and currently is an Adjunct Professor in the School of Public Policy & Administration, at the University of Delaware.

Dr. Fred DeMicco has worked in Healthcare at the Massachusetts General Hospital, Boston (RD obtained) and at Walt Disney World in hotel and hospitality management where he also obtained a Ductorate Degree from Disney University, Orlando. Dr. DeMicco was the President of International CHRIE –NENA (Northeast North American Federation). He was presented the International CHRIE/Cornell Howard B.

Meek Award of Excellence for 2017. Dr. DeMicco presently helps to lead and manage the Leadership and Ethics: Lessons from Disney certificate program at NAU with 3 former Disney executives. Dr. DeMicco’s teaching and scholarship is in strategic management, innovation, and healthcare services management.

He is also the David Michael Meeks Visiting Scholar to the University of Memphis - Kemmons Wilson School and the Senior Advisory Board Member for the Journal of Hospitality and Tourism Technology (JHTT).
