The restaurant, overseen by Executive Head Chef and Masterchef Finalist Nico Fitzgerald, champions locally-sourced and seasonally centred ingredients. The Gallivant Camber Sands is committed to prioritising sustainable working practices and minimising impact on the world. For instance, in the kitchen no gas cookers are used but rather meals are prepared over locally sourced charcoal from sustainable British woodland and over 90% of the ingredients used come from the British Isles.
