Nick Fielding has been appointed as Corporate Director of Restaurants at Noble House Hotels and Resorts

Noble House Hotels & Resorts, Ltd., proudly announces the appointment of Nick Fielding to corporate director of restaurants. The new role carries responsibilities ranging from constant restaurant concept rejuvenation and providing guidance to each restaurant to meet fiscal responsibilities, to development of employee training standards and execution of consistent, accurate marketplace branding. Fielding joins Noble House Hotels & Resorts most recently from Wilshire Restaurant in Santa Monica, Ca. where he acted as general manager. There he was responsible for managing a staff of 85 and directing the operational strategy of the restaurant from 2008-2012, with a keen focus on driving profitability and reducing expenditures. Prior to that, he served as food and beverage director at Noble House managed Little Palm Island Resort & Spa in Little Torch Key, developing an extensive wine education program for the “No. 2 hotel dining room in the United States” as voted by Conde Nast Traveler. Fielding is a certified sommelier from the Court of Master Sommeliers.
