Mauro Santarelli has been appointed as Head Chef at Andaz Dubai The Palm

Andaz Dubai the Palm has appointed Mauro Santarelli as head chef. The Argentinian joined the Hyatt property at the end of October 2022 and brings an immense amount of international Hyatt experience.

In his new role, he will continue to use fresh products from the Andaz container farm, highlighting pure and organic ingredients.

Santarelli was born and raised amongst Argentinian farming fields, where he studied agriculture, specialising in cattle feed and nutrition. In 2006, he decided to explore the culinary world of Barcelona, where he offered cooking classes, teaching the complexities of paella and tapas dishes. In 2012, after mastering Spanish cuisine, he opened his own tapas bar, Reco des Moll in Mallorca. In 2015, he joined Park Hyatt Mallorca as chef de cuisine. In 2018, he moved to Grand Hyatt Jakarta as executive sous chef and in 2021, he shifted base to Park Hyatt Abu Dhabi Hotel & Villas as chef de cuisines. One of his proudest achievements during this time was the creation of the restaurant Maté, which offers a take on Argentinian-Lebanese cuisine.
