Salvatore Silvestrino has been appointed as Executive Chef at Amwaj Rotana
Amwaj Rotana Hotel has announced the appointment of Salvatore Silvestrino as executive chef. With a career spanning over three decades in the culinary world, Silvestrino brings a wealth of expertise to his new position.
Silvestrino has worked for an array of properties across several markets, such as Hotel Grand Vesuvio in Napoli, Italia, InterContinental Hotel Dubai Deira Creek, Marriott Resort & Spa in Bangkok, Fairmont Hotel in Singapore, Movenpick Hotels and Resorts in the Middle East, Jupiters Hotel and Casino in Broadbeach, Australia, Fairmont Bab Al Bahr in Abu Dhabi, and Sheraton Grand Mirage in Port Douglas, Australia.
He also spent three years at Rotana's flagship property in Qatar, City Centre Rotana, Doha, before joining Amwaj Rotana in Dubai.
Silvestrino will focus on creating compelling menu concepts, innovative dining experiences within the hotel and ensuring consistent quality in food production to meet guest expectations. With a passion for old-fashioned cooking styles, he is eager to implement this concept at Amwaj Rotana and to embrace culinary traditions such as pickling, curing and fresh to table concept, reconnecting with time-honoured flavours and techniques.
Sustainability is paramount to Silvestrino's vision. He intends to establish the property as a leader in eco-friendly practices by implementing and encouraging more live interaction cooking during brunches-buffet to reduce food waste and continue to forge partnerships with local farmers that showcase locally sourced ingredients, says the hotel.
Silvestrino's passions include playing and watching football, photography, supporting the local communities on his travels, and cooking for celebrities. He has met some sporting giants like Michael Schumacher, Felipe Massa, Andrea Pirlo and Gennaro Gattuso but grilling and sparring with the two-time World Heavy Weight Boxer, George Foreman has been his most favourite experience.
