Robert Souter has been appointed as Associate Food & Beverage Director at Shimmers, at Jumeirah Mina A’Salam

Robert Souter has joined Shimmers at Jumeirah Mina A'Salam as associate F&B Director.

Half French and half British, Souter has more than 10 years of international experience to the role, with previous positions in Bahrain, Tokyo and Paris on his CV.

His background includes overseeing hotel openings, managing multiple outlets, and handling both volume and high-end businesses. Previous roles in Dubai include as project manager at Gates Hospitality and at Grand Mercure, Dubai.

He started his hospitality career at Four Seasons Hotels & Resorts, where he progressed from a demi chef in Paris to lobby lounge manager and acting director of restaurant operations in Bahrain. In 2018, Souter moved to Tokyo, where he joined The Peninsula Hotel as the Assistant Director of F&B.

In 2022, Souter spent time as general manager of Dasha Restaurant and Bar, a six-month pop-up venue in Jumeirah Emirates Towers from Akira Back. His role included spearheading the opening with a 2.5 week lead-in time and the recruitment and training of 25 team members.

He has also contributed to creating a real estate company, One Group, that encompasses acquisition, renovations, and property management.

Souter is an alum of the School of Oriental and African Studies at the University of London and Les Roches Hotel Management School in Switzerland.
