Francesco Immorlano has been appointed as Bars Manager at SLS Dubai Hotel & Residences
Francesco Immorlano joins SLS Dubai as the new bars manager. He brings with him a decade of experience in the luxury hospitality industry.
Previously, Immorlano has worked with award-winning, international venues and has collaborated with some of the world's most recognised industry professionals.
He has worked in Spain and the UK, where he worked at Sexy Fish in London. On moving to the UAE, Immorlano joined ZUMA Dubai as senior bartender before being promoted to bar supervisor in 2021.
Following this, he took on the role as head bartender and assistant bar manager at Ergo Dubai.
Both ZUMA Dubai and Ergo Dubai have been listed among the World's 50 best bars, with ZUMA ranked in 17th place in 2022 and Ergo Dubai came in 69th place in 2023.
Immorlano now brings his creative flair to menu creation at SLS Dubai. He goes through a three-step process when creating a drink, starting with universally recognised flavour pairings; introducing an element of surprise; and finally ensuring the right balance for a palatable experience.
One of his most celebrated creations at SLS Dubai is the Bachue cocktail. A playful twist on the classic whiskey highball and garnished with a "bitten" slice of melon, it's designed to be softer on the palate for non-whiskey lovers. In keeping with the ethos of SLS, Immorlano plans to create a unique guest experience. This includes serving innovative, creative and memorable beverages with personal interactions.
