Los Angeles-based Palisociety, one of the fastest growing independent hotel brands in the country, will usher in a forward-thinking chapter of growth and expansion with the debut of the Palisociety Dining Group this summer.

A new concept within the Palisociety portfolio with a keen focus on the brand’s signature food & beverage experiences, Palisociety Dining Group will be responsible for restaurant concept development and the evolution of the company’s well-established footprint in the dining space, under the skilled eye of new Creative Director of Food & Beverage, Casey Lane, and new Managing Director of Food & Beverage, Will Marquardt. Portfolio wide, Palisociety currently operates 17 food and beverage outlets; in late 2022, it will be adding four venues across three new hotels and in 2023, will be adding an additional 10 venues across nine new hotels.

Chef Lane, a Texas native, is a four-time James Beard Foundation Rising Star semi-finalist who has developed a well-recognized reputation for his rustic, internationally influenced food with a distinct sense for casual, yet confident flavors and recipes. His early career found its roots in Portland, Oregon at Clark Lewis, one of the city’s seminal institutions, before he landed in Los Angeles in 2009, where he went on to enjoy great success with Venice’s The Tasting Kitchen and more. He recently partnered with Palisociety on Marco Polo Trattoria & Bar, the coastal Italian-inspired all-day restaurant at Silver Lake Pool & Inn. He has been listed as a Food & Wine Ten Best Chef (2013) and his restaurants have been featured on GQ’s Top Ten New Restaurants, Los Angeles Magazine’s Best New Restaurant, Eater’s Hottest Restaurants, and more.

The Palisociety Dining Group will complement the brand’s signature ethos, seeking to perfect the concept of the “neighborhood hotel restaurant” by investing in a team of talented chefs, visionaries, and operators alongside Lane who will bring this new vision to life. By leveraging the robust operations and infrastructure of the company’s existing hotel platform to create efficiencies and standardization across multiple unique and intimate food & beverage outlets, the launch will create consistency and reliability across the platform and within every hotel, from coast to coast.

The underlying success of Palisociety Dining Group food and beverage outlets will stem from the importance placed on the hotels’ restaurants being unique outposts for the platform in each neighborhood they inhabit, yet with an underlying framework of structure, repetition, and consistency.The new food & beverage model will focus on the creation and development of four key concepts across the portfolio (Italian, French, All-Day and Mediterranean) that will be implemented in various hotels based on their market, audience, and culinary history. As always, great service is at the forefront of the experience, menus are seasonal, cocktails are a specialty focus, and price points are moderate.
