Thompson Madrid Debuts New Culinary Concepts and a Transformed Surrounding Plaza at the Heart of the City

Thompson Madrid today announces a significant expansion with the completion of the surrounding plaza and the opening of three new restaurants. Since its debut, Thompson Madrid has set a standard for design-forward hospitality in the capital. Now, following a transformative evolution of both its city surroundings and its culinary program, the property is reintroducing itself as a destination for travelers who appreciate classics delivered with refined sensibility, distinctive style, and a deep connection to the culture of the city.

Thompson Madrid serves as a sophisticated home base for travelers eager to explore the city’s vibrant neighborhoods and cultural landmarks. Following the full renovation of Madrid’s Plaza del Carmen, the hotel now opens into a lively square with a central green space, open-air terraces, and renewed energy, making Thompson Madrid one of Madrid’s most inviting social hubs. Inside, interiors by Madrid-based López y Tena and LYTA Interior Design & Architecture Studio layer leather, marble, and wood to create a timeless yet modern aesthetic, resulting in a refined and welcoming urban retreat that feels seamlessly connected to its surroundings.

Alongside the transformation of Plaza del Carmen adjacent to Thompson Madrid, the property introduces a bold new culinary chapter with three distinct dining concepts that redefine the hotel’s gastronomic identity.

Together, these new concepts position Thompson Madrid as a culinary destination, offering guests and locals distinct ways to experience the city’s flavors and culture:

MAKÁÁ Rooftop Restaurant

Located on the rooftop, MAKÁÁ is a fire-driven Mediterranean concept by Grupo Lamucca. The open kitchen highlights ingredients from the garden, sea, and farm, uniting flavors through fire. Designed by Patricia Bustos, the space blends sculptural forms with Mediterranean warmth, while rooftop greenery by Laura Berrocal Contreras creates a lush environment that invites guests to see Madrid from a new perspective–reflecting Thompson Hotels’ commitment to timeless design infused with cultural sensibility.

La Barra de Ultramarines

Paying tribute to Madrid’s classic tapas culture, La Barra de Ultramarines is located on the ground floor with direct street access and an outdoor terrace. Designed to celebrate the city’s castizo spirit, the space emphasizes spontaneity, conviviality, and local flavor, becoming a natural gathering point for both guests and locals. The bar brings the traditions of Spanish and Madrilenian gastronomy to life in a relaxed, approachable setting.

Jack’s Club

An intimate British-inspired speakeasy, Jack’s Club is housed within the historic remains of the former Church of San Luis Obispo. Preserving architectural elements over two centuries old, the bar combines storytelling-driven cocktails with handcrafted details to create a layered, immersive experience. Inspired by the gentlemen’s clubs of Edinburgh’s George Street, the space offers refined, atmospheric lighting and live music centered around a classic piano bar, providing a sophisticated escape rooted in both heritage and place.

The culinary transformation complements the hotel’s existing amenities, enhancing the guest experience across Thompson Madrid. Visitors can unwind on the rooftop infinity pool with hydromassage, relax in the open-air courtyard, or enjoy the hilltop residential-style bar and destination day club. A 24-hour boutique fitness center with state-of-the-art equipment supports wellness needs, while curated experiences—including guided tours, art exhibitions, and concerts—allow guests to fully engage with the energy and culture of Madrid.

As the first Thompson hotel to open in Europe in 2022, the property sets the stage for the next chapter in the brand’s European expansion, with additional openings planned for Seville and Rome later this year.
