Dining is woven into the expedition experience through Camp Cookery, the retreat’s signature culinary program inspired by the writings of Horace Kephart – one of the founding voices behind the Great Smoky Mountains National Park who believed that a night in the woods is not an excuse to sacrifice fine dining – while integrating farm-to-table ingredients and Cherokee influences. Founder Matthew McGee spent decades traveling to some of the world’s most remote and celebrated wilderness destinations, where mainstream guests rarely traveled. In these places, he sought out and stayed with local guides who provided the authenticity and depth of an experience that cannot be found in resorts or individual rentals. Each day was met with unmarked places, routes purposefully set, guided adventures that were not prefabricated, and returned each evening to local delicacies with the warmth of stories and hospitality usually set around a fire. Afterwards, he left with a richer memory of both the people and the landscape than he could have discovered alone.
