Eyck ZimmerEyck Zimmer, former holder of the National Chef of the Year title, is moving to Hong Kong to become chef de cuisine of the Derby restaurant at the city’s celebrated Jockey Club in Happy Valley. Zimmer, who has held positions at some of the UK’s most prestigious hotels including London’s Claridge’s, Lanesborough and Ritz hotels as well as the Lowry in Manchester, will join the 70-seat fine dining restaurant and bar on 1 July. He has signed a three-year contract with the Jockey Club and will replace current chef de cuisine Donovan Cooke who is returning to his native Australia to set up his own restaurant. Zimmer left Rocco Forte’s Lowry hotel in Manchester in 2008 to become executive head chef at the Four Seasons Hotel Ritz Lisbon, where he went on to become Portuguese Chef of the Year. He left Portugal to return to his native Germany in 2009 and has spent the past year working as director of food at Berlin’s Andel’s hotel.
