Alessandro Buffolino has been appointed chef at Acanto restaurant at Hotel Principe di Savoia working under executive chef Fabrizio Cadei, who oversees all F&B initiatives. Despite being young, Buffolino has worked at a variety of Michelin starred restaurants. A native of Benevento, Buffolino began his career in Rome and then moved to France to work with renowned chefs Pierre Orsi and Michel Guerard at Eugenie Les Bains, a 3 Michelin star restaurant. There, Buffolino learnt many techniques which he would then use for his cuisine. He returned to Italy in 2012 to work at Hotel Eden in Rome, which soon received its first Michelin star. Buffolino will oversee the kitchen at Acanto and has created a new menu based on high quality and traditional products reinvented with new and experimental cooking methods. He uses local and seasonal products together with innovative techniques – like the hotel, a perfect combination between tradition and modernity to satisfy an Italian and international clientele. At Acanto, he has created two separate menus for lunch and for dinner; a light menu for lunch and a gourmet menu for dinner.
