The Highland Dallas is pleased to welcome three new key players to its culinary team: Jorge Gonzalez, Chef de Cuisine; Eric Cobb, Executive Pastry Chef and David McIntire, Banquet Manager. All respected professionals in the hospitality and culinary industries, Gonzalez, Cobb and McIntire will bring exceptional leadership, skill and knowledge to their respective positions, allowing The Highland Dallas to continue delivering unprecedented service and top-quality dining experiences to guests. A seasoned professional with a stellar track record of culinary successes, Gonzalez is responsible for overseeing day-to-day operations at the hotel’s acclaimed restaurant, Knife. A Texas native, Gonzalez first earned an appreciation for culinary arts working on his grandfather’s farm. This work inspired him to earn a degree in Culinary Arts from Collin County Community College in McKinney, Texas. Prior to joining The Highland Dallas, he served as Sous Chef at the celebrated Fearing’s Restaurant at The Ritz-Carlton in Dallas for more than eight years. Additionally, Gonzalez assisted in opening Chef Tom Colicchio’s renowned restaurant, Craft, at the W Hotel in Dallas. Gonzalez began his culinary career working at Jasper’s in Plano, Texas, where he received extensive training and honed his culinary and leadership skills.
