Dan Grunbeck has been appointed executive chef of the celebrated bar and culinary concepts within the Kimpton Rowan Palm Springs: 4 Saints, Juniper Table, High Bar and Window Bar.

Grunbeck comes to Palm Springs from The Lodge and Spa at Brush Creek Ranch in Wyoming. During his three-year tenure as executive chef, the luxury ranch resort was consistently ranked as one of the best resorts in the U.S. by Travel + Leisure World's Best Awards and Condé Nast Traveler Readers' Choice Awards, claiming the No. 1 spot in 2019 and 2017, respectively. As executive chef, Grunbeck increased profitability by 30 percent, oversaw the Akaushi Cattle Program and led five-star culinary experiences from multi-course dinners under the stars to rustic cowboy cookouts.

Other high-profile hotels and restaurants where Grunbeck has worked throughout his 15-plus-year career include Kimball's Kitchen and Life Saving Station at Sanderling Resort & Spa in Duck, N.C.; the Belfair, a private residential golf club in Bluffton, S.C.; and The Little Nell in Aspen, Colo.

In his new role, Grunbeck is putting his touch on the menus at Juniper Table and 4 Saints. His immediate focus is revamping 4 Saints' weekend brunch, which launched last fall, with beefy, umami-laden additions like a prime flat iron beef steak with truffle fries, wagyu patty and brisket hash. Marrying his French-Italian cooking style with his love of fresh, locally sourced ingredients, Grunbeck aims to elevate desert dining through memorable culinary moments infused with a strong sense of place.
