Nicola Russo has been appointed as Executive Chef at Capella Ubud, Bali

Capella Ubud, Bali has appointed Mr. Nicola Russo as Executive Chef. In his new role, Chef Russo will bring a wealth of experience working in internationally acclaimed Michelin starred restaurants and luxury hotels across Europe, the Middle East and Asia.

Originally from Pisa, Italy, Nicola Russo's culinary career is inspired by his love and respect for the art of cooking, fresh ingredients, and nature. After graduating from culinary institute Ipscat G. Matteotti, Nicola sought opportunities to further develop his own creativity. During his apprenticeship he worked for several Michelin Starred restaurants and luxury hotels. At the age of 33 he moved to Hong Kong for his first Chef de Cuisine role in fine dining restaurant Tosca and received One Michelin Star Rating in 2018 and 2019.

Chef Russo will oversee operations at Capella Ubud's duo of flagship dining destinations, Api Jiwa and Mads Lange. Mads Lange is a split-level tented dining room showcasing dramatic rainforest and valley views and contemporary European cuisine. Api Jiwa is the camp's signature dining experience, meaning 'fire to the soul.' The theatrical Asian barbecue concept was inspired by the ancient Japanese Robatayaki tradition. Nicola will also be casting a fresh culinary-trained eye over the in-tent dining offerings at Capella Ubud, as well as the residents-only Mortar and Pestle Bar and The Camp Fire.

The Capella Hotels and Resorts collection consists of properties in Singapore, Bangkok, Ubud, Shanghai, Sanya, and Düsseldorf. Joining the portfolio later this year is Capella Hanoi, designed by world-renowned architect Bill Bensley. Set to open in the coming years include properties in the Maldives, Sydney, and Chiang Mai.
