The Ritz-Carlton, Astana has announced the appointment of Fabio Polidori as the hotel's executive chef.
Possessing an impressive amount of management experience in the world of cooking, Fabio Polidori has assumed the position of head chef marking the beginning of an exciting transformation of the hotel's gastronomic department.
Fabio's resume boasts an abundance of big-name restaurants and hotels in several countries and continents making him not only a skilled cook, but also a high-classed manager. Fabio managed the kitchens at hotels of the Renaissance and Kempinski chains followed by working as the head chef of three restaurants at the Shanghai Marriott Pudong hotel which has significantly enriched his professional career. Afterwards, Fabio continued to work at the Shangri La, Qingdao, China where he managed a team of 128 staff in the restaurants of the five-star hotel.
Fabio's cooking repertoire includes a wide array of global cuisines, encompassing Europe, the Far and Middle East, Australia and Southeast Asia. Fabio's gastronomic career began from Italian cuisine's homemade dishes which has later become the foundation of his distinct cooking style - well-favored, well-flavored and straightforward.
Fabio later reinforced his gastronomic arsenal with recipes from Greece, new combinations of ingredients from the cuisines of Thailand and China and some remarkable gastronomic specialties from Australia and Dubai.
