Fredericos Tsaparas has been appointed as Director of Restaurants at Atlantis, The Palm

Atlantis The Palm Dubai has 31 individual restaurants, bars and a beach club, with venues from Gordon Ramsay, Nobu Matsuhisa and Giorgio Locatelli. The resort serves 4.4 million dining guests every year and, with the addition of Atlantis, The Royal, Atlantis Dubai will be home to more celebrity chef outposts than any hotel in the world.

In his new role, Tsaparas will have a hand in running all of them, along with the 800-plus F&B service staff across the resort.

Tsaparas is no stranger to Kerzner - the operators of Atlantis - having got his start at One&Only Royal Mirage Dubai as an F&B management trainee in 2012. Sticking with the training for six months, he moved up to assistant restaurant manager where he oversaw a team of 15.

He later became assistant manager of the Beach Bar & Grill Restaurant, and the Seafood & Steak Restaurant. In 2013, he became manager of the Jetty Lounge, before moving on to assistant F&B manager across The Palace and Arabian Court portions of the resort - a total of 14 outlets.

Moving into independent F&B, he became group GM of Skelmore Hospitality Group in 2016, working across both Roberto's Abu Dhabi and Dubai. In 2018, he joined White Label Investments Management as director of operations, having a hand in both Beefbar Dubai and Crazy Fish Dubai.

Returning to hotel F&B, his most recent posting was with Rotana as corporate director of F&B where he worked across 70 hotels, 14 countries and 300 F&B outlets.

Fredericos Tsaparas is an alumnus of Bournemouth University – Class of 2011.
