Nicolas Madueno has been appointed as Executive Chef at Taj Jumeirah Lakes Towers

The Peruvian chef with over 20 years of global experience will lead culinary direction of the hotel's four signature venues.

Taj Jumeirah Lakes Towers has announced the appointment of chef Nicolas Madueno as executive chef, bringing with him a global culinary résumé spanning over two decades and six continents.

Madueno's career began in Peru and has taken him through senior culinary roles in some leading hotels and resorts across the Caribbean, Asia, Europe, Middle East, Africa, and South America.

In his new role at Taj JLT, he will oversee the culinary operations of the hotel's four distinct venues, leading kitchen teams, curating menus, and elevating the hotel's F&B experience with a strong emphasis on creativity and guest satisfaction.

Madueno's recent roles include executive chef at Radisson Blu Dubai, where he oversaw 14 F&B outlets and led large-scale banqueting operations.

Prior to that, he served as culinary director for Amaru Nikkei Cuisine in Mumbai, spearheading the launch of the brand's debut fine dining concept. His global track record also spans senior culinary leadership at Hilton Kinshasa, Patina Maldives, Kempinski Muscat, and Marriott Marquis Doha.

The new executive chef brings a wealth of experience in leading hotel pre-openings, designing concepts, and training teams with a focus on authentic, contemporary cuisine rooted in regional storytelling.

From task force leadership to consulting on luxury dining launches, Madueno is known for blending Peruvian-Nikkei influences with international flair, bringing to life concepts that resonate with diverse audiences.

His extensive travels have allowed him to immerse himself in diverse cultures and cuisines, enriching his culinary repertoire, says Taj.
