Most recently, Laliotis spent 20 years with Evolution Hospitality, where he was instrumental in shaping the company's food and beverage identity. He played a pivotal role in launching the iconic Hard Rock Hotel San Diego, one of Evolution's most complex F&B ventures. As Vice President of Food & Beverage, he helped define and elevate Evolution's portfolio of hotels, infusing each with a strong, distinct culinary perspective. From concept development to banquet operations and beyond, his impact was transformational.

A natural mentor, he is beloved for his ability to cultivate talent and elevate teams. His leadership has guided countless chefs and F&B directors to flourish in their careers. Laliotis leads with heart and a deep sense of purpose, inspiring those who work alongside him.

Beyond the kitchen, Gus and his wife Karrie share a love of food, travel, and family—especially their frequent visits to Greece and time spent cooking together. Gus is also a proud father of three: Jordan, Chase, and Acacia—each named after one of his favorite wines or wineries, a fitting nod to his lifelong passion.
