Set within the Dubai Desert Conservation Reserve, Al Maha, a Luxury Collection Desert Resort & Spa, announces the appointment of Chef Yiduo Wang as Executive Chef.
Chef Yiduo brings extensive international experience across luxury hospitality, with a career spanning globally recognised luxury brands in the Marriott Bonvoy portfolio, including The Ritz-Carlton and EDITION Hotels. She is known for shaping world-class dining experiences within complex hospitality environments, with a focus on pre-opening operations, pastry innovation, and contemporary global cuisine.
Most recently, she served as Executive Sous Chef at Marriott Resort Palm Jumeirah Dubai, where she played a key role in the pre-opening of the 608 room luxury resort. In this role, she oversaw ten dining concepts and led a culinary brigade of more than 180 professionals, delivering a large-scale, multi-outlet operation.
Originally trained in classical pastry and bakery, Chef Yiduo has evolved into a versatile culinary leader, bridging pastry artistry with broader kitchen operations. Her approach combines precision, creativity, and cultural depth, supported by strong commercial acumen and a detailed understanding of culinary operations.
Having spent several years in the Middle East across Bahrain and the United Arab Emirates, she has developed a deep appreciation for the region’s culinary heritage. She draws inspiration from its ingredients, flavours, and traditions, integrating them into her culinary approach while respecting their authenticity, alongside influences from Asian and Latin American cuisines.
Her work is also defined by a commitment to responsible practices. Across her previous roles, she has led initiatives that reduced food waste and eliminated over one million single-use plastic bottles, supporting more sustainable and efficient culinary environments.
At Al Maha, she will oversee the resort’s culinary direction, leading all kitchen operations and dining experiences. Her vision is centred on thoughtful storytelling, refined simplicity, and a deep connection to place, creating experiences that are meaningful and immersive, reflecting the spirit of the desert.
