Victor Garrido has been appointed as Executive Chef at Zadun Los Cabos, a Ritz-Carlton Reserve

Zadún Los Cabos, a Ritz-Carlton Reserve – one of just nine Ritz-Carlton Reserves in the world – announces the appointment of Victor Garrido as Executive Chef, overseeing the culinary direction and operations across the resort’s acclaimed dining venues Humo, Equis, El Barrio, and Candil Bar in addition to all in-room dining and private dining experiences and banquets.

The appointment marks an exciting new chapter for Zadún’s food and beverage offerings, as the resort continues to expand its position as one of Los Cabos’ premier culinary destinations through elevated dining concepts, experiential programming, and internationally inspired chef collaborations.

At Zadún, Chef Victor will oversee the resort’s diverse culinary portfolio, including Humo, which reopened in November 2025 with a renewed focus on wood-fired international cuisine; Equis, offering intimate sea-to-table experience; and El Barrio, known for its elevated interpretation of traditional Mexican cuisine. He will also lead the beverage vision at Candil Bar, where desert-inspired, boundary-pushing cocktail artistry complements the resort’s immersive approach to food and drink.

Beyond the restaurants and bars, Zadún continues to deepen its experiential culinary programming with hands-on guest offerings including wine-making and Agave workshops led by the resort’s expert culinary team. Under Chef Victor’s leadership, the resort will also continue to expand its chef residency and takeover program, bringing acclaimed culinary talent from across the globe to Los Cabos for limited-time collaborations and immersive dining experiences.

Most recently, Zadún partnered with Mandapa, a Ritz-Carlton Reserve for a two-week culinary residency (May 8-22, 2026) featuring the property’s celebrated chef, further reinforcing Zadún’s commitment to global culinary exchange and destination-driven storytelling. Similar chef takeovers and collaborative dining experiences are expected to continue as an ongoing pillar of the Reserve evolving food and beverage strategy.

With more than 28 years of hospitality experience and over 26 years in professional kitchens, Victor brings a globally influenced culinary perspective shaped by leadership roles across Mexico, Egypt, Ukraine, Saint Lucia, Turks & Caicos, and the United States. Throughout his career, he has contributed to hotel openings, rebrandings, and large-scale culinary initiatives for internationally recognized hospitality brands including Fairmont, Sheraton, Viceroy, Capella, Gansevoort, and Thompson Hotels, as well as independent restaurant concepts.

In his new role, Chef Victor will lead Zadún’s overall gastronomic vision with a focus on concept evolution, culinary innovation, strategic partnerships, and immersive dining experiences that connect guests to the spirit and culture of Baja California Sur.

Deeply inspired by the landscapes and culture of Baja California Sur, Victor is committed to creating cuisine with a strong sense of place, working closely with regional farmers, fishermen, and producers to highlight the area’s natural richness through thoughtful, ingredient-driven menus. His culinary expertise spans Mexican, French, Italian, Caribbean, Arab, Lebanese, Indian, and Thai cuisines.
