Shimkus brings more than 30 years of hospitality experience and extensive expertise in food & beverage, convention, and resort operations. Most recently, he served as Director of Food & Beverage at Hilton Boston Park Plaza, where he oversaw a $31 million operation and led culinary, catering, banquet, restaurant, and convention service teams. Throughout his career, he has held leadership roles with renowned organizations including Gaylord Palms Resort, Reunion Resort & Club, the Boston Convention & Exhibition Center, Harvard University, Hyatt Hotels, and Foxwoods Resort & Casino.
