Davide Allievi has been appointed as Executive Chef at Hyatt Regency Coconut Point Resort and Spa

Originally from Italy, Allievi brings a culinary philosophy based on Italian tradition and elevated by contemporary techniques, global influences and a strong commitment to local sourcing. His career spans luxury hospitality destinations across Europe, Asia, the Middle East and the Maldives, including leadership roles at Park Hyatt Maldives Hadahaa, Grand Hyatt Bali, The Westin Resort Nusa Dua and The Ritz-Carlton Guangzhou, where the restaurant earned Michelin Plate recognition during his tenure.

Most recently, Allievi served as executive chef at Park Hyatt Maldives Hadahaa, where he led culinary operations across multiple dining outlets, with responsibilities spanning menu development, food and beverage performance, sustainability and team leadership. Under his leadership, the resort achieved its highest recorded food and beverage and breakfast guest satisfaction results in 2025, earning the distinction of No. 1 Park Hyatt worldwide for Food & Beverage and Breakfast Experience.

Earlier in his career, Allievi held culinary leadership positions at Grand Hyatt Bali and The Westin Resort Nusa Dua in Indonesia, as well as Emerald Hospitality Group in London. At The Ritz-Carlton Guangzhou in China, he refreshed the restaurant’s Italian menu with a contemporary approach and led initiatives focused on ingredient sourcing, kitchen operations, training and consistency, contributing to the restaurant’s Michelin Plate recognition in 2019.

Allievi developed his technical foundation in Italy, including experience at restaurants led by Michelin-recognized chefs Carlo Cracco and Felice Lo Basso. His international background includes fine dining, contemporary Italian cuisine, resort dining, pastry and large-scale hospitality operations, informing a versatile approach to menu development that balances authentic flavors with modern creativity.

Allievi’s appointment marks a new era for food and beverage at the resort. He will work alongside Kory Foltz, Director of Food and Beverage, whose more than 30 years in hospitality include senior leadership roles at Sunseeker Resort and several Hyatt properties.
