Chef Pablo Arias leads the culinary vision of The St. Regis Costa Mujeres Resort, bringing an international career shaped by Michelin-starred kitchens in Europe and senior culinary roles within Marriott International.
Originally from Galicia, Spain, Arias developed an early appreciation for ingredient-driven cuisine through the culinary traditions of his upbringing before continuing his career at W Dubai - The Palm, W Verbier, The St. Regis Aspen Resort, and The St. Regis Punta Mita Resort. Since relocating to Mexico in 2023, he has further developed a culinary philosophy deeply rooted in the destination, with nearly 90 percent of ingredients sourced locally and all seafood coming from sustainable Mexican suppliers. At The St. Regis Costa Mujeres Resort, Arias is focused on establishing the resort as a culinary destination through innovative dining concepts and contemporary interpretations of Mexican gastronomy, connecting guests with the richness of the destination through a global luxury lens.
