Carlos Hannon has been appointed as Executive Chef at Rosewood San Miguel de Allende

Carlos Hannon has been appointed executive chef of Rosewood San Miguel de Allende, Mexico’s preeminent luxury boutique hotel. In this role, Chef Hannon will lead the talented culinary team at the hotel’s three distinctive dining venues: 1826 Restaurant, Luna Rooftop Tapas Bar and La Cava. Chef Hannon’s appointment marks his return to the hotel and the Rosewood brand, having last served as executive chef at Rosewood San Miguel de Allende from 2010 – 2012 as a part of the hotel’s pre-opening team. Chef Hannon also played an important role on the pre-opening teams for Rosewood Mayakoba and Rosewood Sand Hill, and also was the executive chef at Rosewood Little Dix Bay in 2012.

Paul Sykes has been appointed as Director of Food and Beverage at Rosewood San Miguel de Allende

Sykes joins Rosewood San Miguel de Allende with an impressive background in the food and beverage industry. In his most recent role, he served as food and beverage service manager at Banyan Tree Mayakoba in Playa del Carmen, Mexico. Prior to Banyan Tree, Paul worked for five years at Karisma Hotels & Resorts, where he held several roles including food & beverage manager, maître d’ and sommelier. Sykes is a certified sommelier by the Mexican Association of Sommeliers and is a graduate of Brooke Weston City Technology College in the United Kingdom. Additionally, he also holds a Bachelor’s of Arts in International Tourism Management from the University of Derby Buxton Campus, also located in the United Kingdom

Anabel Ramos Acevedo has been appointed as Spa Director at Rosewood San Miguel de Allende

Anabel boasts nearly a decade of experience working within the ultra-luxury hospitality space, including six years at Rosewood Mayakoba’s award-winning Sense spa in the Riviera Maya. During her time at Rosewood Mayakoba, Anabel served as the Spa Operations Supervisor, responsible for recruiting and training spa talent and overseeing the day-to-day operation of the spa. Most recently, she was Spa Manager for Feel Urban Day SPA by Live Aqua in Mexico City, where she shaped the spa’s sales strategy, budget, and social media strategy, in addition to coordinating the day-to-day operation of the space.

Alondra Saldarriaga has been appointed as Spa Director at Hotel Matilda

Ms. Saldarriaga joined the staff of Hotel Matilda in August 2010 as Assistant Spa Director. Prior to Hotel Matilda, she was a sales representative with Natura Bissé International in Mexico City. In Toronto, Canada, she earned a diploma from the Humber Esthetician & Spa Management College, where she also completed esthetician training at the school’s Humber Spa. Also in Acapulco, as the executive sous chef of Fairmont’s Pierre Marques Hotel, he earned a trio of prestigious awards for the hotel’s Tabachin Restaurant including: AAA’s Four Diamond rating; the first restaurant in Acapulco to receive the Five Star Diamond Award; and recognition as one of the 50 Best Restaurants in Mexico. Prior to Habita Hotels, Mr. James was general manager of the Quinta Real Acapulco and Casa del Mar in Los Cabos. Andrés Sanhueza has been named General Manager at Hotel Matilda

Hotel Matilda has announced that Andrés Sanhueza has taken the reins as General Manager of this iconoclastic boutique hotel in San Miguel de Allende that will open its doors on September 15, 2010. He comes to Hotel Matilda with 13 years of hospitality experience in Mexico and his native Chile. Most recently, he was part of the opening team for the W Hotel Santiago, Chile, where he served as assistant food and beverage director. Previously, he was director of food and beverage at Casa Sierra Nevada, the Orient Express Hotel in San Miguel de Allende, and at Valle Nevado Ski Resort, Chile. Additional experience includes: director of restaurants, Hotel Carrera, a Leading Hotel of the World in Santiago, Chile; and head butler/food & beverage operational manager as part of the opening team for the San Cristobal Tower Luxury Collection & Sheraton Santiago, Chile.
